Actually was very easy on the 3680. There are 2 screws on the monitor hinges. Just unscrew them and pop up the hinge and you have access to the two screws holding the keyboard in. Just be careful you hookup and re-lock the connection between the new keyboard and the motherboard properly. There is a lock that has to be snapped down to hold the ribbon in place.

Go to the Acer category in the right sidebar. You’ll find many different guides for Acer laptops. Replacing the keyboard is similar for most models. Read through a few guides and you’ll get an idea how to replace the keyboard.

How do I fix a noisy fan in my Acer Aspire 3620 notebook? Something may be stuck in the fan but I have been unsuccessful in blowing it out with compressed air. Can the fan be lubricated?

Most likely you'll have to replace the fan. Apparently your fan has a bad bearing.

I tried to take the bottom off the notebook with no luck. I took out all the screws on the bottom but the computer still seems to be snapped together very tightly.

Most likely there are screws under the keyboard. Take a look at this disassembly guide. It's a completely different laptop, but the disassembly steps should be very similar.
